In sum, people who like ramps don't just like them, they're obsessed with them. Though ramps are a relatively recent food fad, with their popularity rapidly growing over the past 25 years , they've been around and enjoyed for centuries.

They were foraged by Cherokees for hundreds of years , and they've been a staple spring ingredient in Appalachian kitchens for decades. In Richwood, West Virginia, where they grow prolifically, a local festival has been dedicated to ramps for the past 77 years. Ramps are scarce. The wild plants grow very slowly, taking up to four years to flower and reproduce.

You can't walk into a grocery store in the middle of November and pick up a bunch. Ramps are in season for only a few weeks in the spring and are very limited in supply. In most cultures, onions and other alliums are generally used as a component of a dish, not the main attraction.

But during ramps season, ramps are often treated as the main attraction. The rarity of this foraged food might make ramps feel more exciting, but unfortunately, in my opinion, it does not make them taste better.
